Roasted Tomatillo Guacamole
Roasted tomatillos make this delicious guacamole slightly fruity and tart.

Ingredients
- 1 avocado pitted, peeled and diced
- 4 tomatillos, husked
- 1 TBSP diced jalapenos
- 1/3 cup diced yellow onion
- 1 TBSP lime juice
- 1/4 cup fresh chopped cilantro
- 1 clove garlic, minced
- 1/4 tsp salt
- dash pepper
Directions
- Heat the broiler on your oven and roast the tomatillos in the broiler for about 8 minutes, flip them over and roast 8 more minutes or until the skin is blistered. Allow to cool and the coarsely chop.
- In a mixing bowl mash the avocado with a fork and then add the remaining ingredients including the roasted tomatillos. Mix until well combined, add extra salt and pepper to taste.
- Cover and refrigerate until ready to serve.
