- CACOILA:
- 2 pounds pork shoulder, cut into 1-inch pieces
- 2 TBSP tomato paste
- 1 yellow onion, thinly sliced
- 1/4 cup red wine vinegar
- 2 tsp crushed red pepper flakes
- 1 tsp salt
- 1 tsp paprika
- 1/2 tsp ground cinnamon
- 2 bay leaves
- FOR SERVING:
- hearty rolls or steamed rice

Directions
- Stir together all the Cacoila ingredients in a 6-quart slow cooker.
- Place the lid on the slow cooker and cook on LOW heat for 7 hours or until pork is tender.
- Take the lid off the slow cooker and stir.
- Serve on rolls or over steamed rice.
