Smoky Oven Roasted Chicken
A whole chicken rubbed with a smoky spice mix then oven roasted at high heat gives this chicken a smoky flavor without the smoker.

Ingredients
- 1 TBSP smoked paprika
- 1 tsp ground cumin
- 1 tsp ancho chili powder
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp salt
- 1/2 tsp ground black pepper
- 1/2 tsp dry mustard
- 1/2 tsp cayenne
- 1 whole chicken (about 6 lbs)
- 2 TBSP olive oil

Directions
- Preheat the oven to 475°F. Line a rimmed baking sheet with parchment paper.
- In a small bowl mix together all the spices and set aside.
- Remove any giblets from the chicken cavity then pat the chicken dry with paper towels. Rub the oil all over the chicken then rub the spice mixture all over the chicken including under the skin as much as you can.
- Lay then chicken breast-side up on the baking sheet lined with parchment paper. Roast the chicken in the preheated oven for 75 to 90 minutes or until the chicken has an internal temperature of 165°F.
- Take the chicken out of the oven and place on a cutting board. Allow chicken to sit for 15 minutes before slicing.
