servings: 4
total time: 15 minutes
recipe by: Rae
Ingredients
- 12oz of your favorite white fish ( I used tilapia), cut into 2 x 2 inch chunks
- 1/4 cup Mexi Spice
- 1/4 cup cornstarch
- Cooking oil
- 8 tortillas, toasted if you you prefer
- lime wedges
- ancho lime slaw
- pico de gallo
- sprigs of cilantro
- sour cream
Directions
- Coat the fish in Mexi-spice then toss in cornstarch. Shake off excess.
- Heat a 12 inch nonstick skillet over high heat with a little oil. Once the oil starts to smoke arrange the half the fish in the pan. Spacing evenly apart. Cook for about 2-3 minutes on each side or until crispy and browned.
- Remove from pan and repeat the process with the remaining fish.
- Serve in the tortillas with all the accompaniments and top them the way you like.
