Arugula Salad with Nectarines and Feta
Arugula tossed in a honey-Dijon vinaigrette and topped with fresh herbs, cucumbers, nectarines, and feta cheese.

Ingredients
- 1 TBSP olive oil
- 1 TBSP white balsamic vinegar
- 1 tsp honey
- 1 tsp Dijon mustard
- 1/2 tsp kosher salt
- dash fresh ground pepper
- 5 oz baby arugula
- 3 nectarines, peeled, pitted, and sliced
- 1/2 English cucumber, sliced thinly
- 1/4 cup loose mint leaves (chop a bit if they are large)
- 1/4 cup coarsely chopped basil leaves
- 1/2 cup feta cheese crumbles
Directions
- In a bowl whisk together the oil, vinegar, honey, Dijon, salt, and pepper, remove one tablespoon of this mixture and place in a second bowl. Add the arugula to the remaining dressing and toss together.
- In the second bowl toss together nectarines, cucumbers, mint, basil.
- Place the arugula in a serving bowl and top with the nectarine mixture.
- Garnish with feta cheese and serve immediately.
