In a large mixing bowl stir together the yeast and warm water. Stir in the flours, salt, and 2 TBSP olive oil until well combined and a dough is formed.
Knead the dough by hand for about 5 minutes on a lightly floured surface.
Form the dough into a ball and place in a large clean bowl. Drizzle 1 tsp of olive oil over the dough and flip around a few times to coat in the oil. Cover the bowl and put in a warm place to rise for about 1 hour.
THE CHIMICHURRI:
Combine all the chimichurri ingredients in a bowl until well combined. Cover the bowl and refrigerate until ready to use.
MAKING THE PIZZA:
Preheat the oven to 450°F. Lightly oil a large 16-inch pizza pan or a rimmed 18x13-inch baking sheet.
Stretch or roll out the dough to fit in your pan then spread the top of the dough all over with the chimichurri sauce.
Bake in the preheated oven for 10 minutes.
Remove from the oven and sprinkle the top evenly with the mozzarella and Parmesan cheese.
Place back in the oven and bake for 8 to 10 more minutes or until cheese is lightly browned.
