Dutch Oven Damper Bread
A simple no-yeast Australian bread made with self-rising flour, salt, and milk originally cooked in the ashes of a campfire, but this modern version uses the oven.

Ingredients
- 3 cups all-purpose flour
- 4 tsp baking powder
- 1 1/4 cups warm whole milk
- 1 1/4 tsp salt
Directions
- Place a dutch oven (without the lid) in the oven. Turn the oven to 450°F and allow the dutch oven to get hot in the oven for at least 30 minutes.
- Make the self-rising flour by mixing the flour and baking powder together in a large mixing bowl then stir in the milk and salt until well combined.
- Form the dough into a ball then place the dough on a piece of parchment paper.
- Carefully take the dutch oven out of the oven then lay the dough and parchment paper into the dutch oven.
- Place a lid on the dutch oven then place back in the oven and bake the bread for 35 minutes.
- Remove from the oven then carefully transfer the bread to a cooling rack and allow to cool for 30 minutes.
