Lagana (Greek Sesame Seed Bread)

Ingredients
- 2/3 cup warm water plus a little extra
- 1 packet (2 1/4 tsp) active dry yeast
- 2 cups bread flour plus a little extra
- 1 TBSP olive oil plus 1 TBSP olive oil
- 1/2 tsp salt
- 1 tsp sesame seeds
Directions
- Add the 2/3 cup warm water and the yeast to a large mixing bowl and allow to sit for about 5 minutes.
- Stir in the 2 cups flour, 1 TBSP olive oil, and salt until well combined and a dough is formed.
- Knead the dough using your hands on a lightly floured surface for about 7 minutes.
- Form the dough into a ball and place in a large clean bowl. Drizzle 1 TBSP of olive oil over the dough and turn a few time to coat the dough ball in oil.
- Loosely cover the dough and allow to rise in a warm place for about 1 hour.
- Punch down the dough and place it onto a baking sheet then form the dough into an oval shape roughly 11x6-inches.
- Use your finger to poke several indentations on the top of the dough then brush the top of the dough with about 1 tsp water.
- Sprinkle the sesame seeds evenly on top of the dough then allow to rise for 20 more minutes.
- Preheat the oven to 375°F.
- Bake the dough in the preheated oven for about 25 minutes or until lightly browned and cooked through (When cooked through the bread will sound hollow when tapped on the bottom).
