INGREDIENTS
16 ounces uncooked fettuccine noodles
2 medium avocados, peeled and pitted
1 1/4 cups whole milk
1 cup freshly grated Parmesan plus more for serving
1 medium garlic clove, peeled
1 TBSP fresh lemon juice
salt & freshly ground black pepper

DIRECTIONS
Cook the pasta according to package directions then drain and set aside.
Add the avocado, milk, Parmesan, and garlic to a blender or food processor and blend until smooth.
Transfer the sauce to a small saucepan over medium heat.
Stir in 1/2 tsp salt and 1/4 tsp black pepper then simmer the sauce until heated through.
Take the sauce off heat and stir in lemon then taste the sauce and season with additional salt & pepper if needed.
Toss the cooked noodles with the sauce or serve the sauce on the side.
