INGREDIENTS

  • 16 ounces uncooked fettuccine noodles
  • 2 medium avocados, peeled and pitted
  • 1 1/4 cups whole milk
  • 1 cup freshly grated Parmesan plus more for serving
  • 1 medium garlic clove, peeled
  • 1 TBSP fresh lemon juice
  • salt & freshly ground black pepper



DIRECTIONS

  1. Cook the pasta according to package directions then drain and set aside.
  2. Add the avocado, milk, Parmesan, and garlic to a blender or food processor and blend until smooth.
  3. Transfer the sauce to a small saucepan over medium heat.
  4. Stir in 1/2 tsp salt and 1/4 tsp black pepper then simmer the sauce until heated through.
  5. Take the sauce off heat and stir in lemon then taste the sauce and season with additional salt & pepper if needed.
  6. Toss the cooked noodles with the sauce or serve the sauce on the side.
