Green Olive Egg Salad

Chopped hard boiled eggs mixed with mayonnaise, mustard,onion, and green olives.

Green Olive Egg Salad recipe

Ingredients

  • 2 large eggs
  • 2 TBSP diced red onion
  • 2 TBSP mayonnaise
  • 1 TBSP diced green olives
  • 1 tsp yellow mustard
  • salt & freshly ground black pepper



Directions

  1. Place the eggs in a large saucepan and cover with cold water then bring to a boil over medium-high heat.

  2. When the water begins to boil cover the pan and turn off the heat then let the eggs sit for 10 minutes.

  3. Rinse the eggs under cold water then peel the eggs.

  4. Chop the eggs then add the chopped eggs to a large bowl and mix in the olives, onion, and mayonnaise.

  5. Season with salt & pepper to taste.
