1 avocado, peeled, cored, and cut into 1/2-inch chunks
1/4 cup unsweetened shredded coconut
1/2 cup cashews
1/4 cup freshly chopped cilantro
zest and juice from 1 medium lime
DIRECTIONS
Rinse the quinoa under cold water in a fine mesh strainer. Add the rinsed quinoa, 1/2 tsp salt, and the 2 cups of water to a medium saucepan and bring to a boil over medium-high heat. Reduce heat to low and simmer, stirring occasionally, until quinoa is tender and water is absorbed, about 20 minutes. Transfer quinoa to a large bowl and set aside to cool.
When quinoa is cool. Add the mango, avocado, coconut, lime zest, cashews, cilantro, and lime juice. Toss to combine and season with salt & pepper to taste.
