Mango Jalapeno Chicken Wings
Crispy chicken wings in a sweet and spicy sauce made of jalapeno, mango, and ginger.

Ingredients
- 4 lb Chicken wings, separated
- 2 TBSP peanut oil
- 2 TBSP baking powder
- 1 tsp salt
- 1/2 tsp garlic powder
- 1/2 tsp chili powder
- 1/4 tsp onion powder
- 1/4 tsp ginger powder
- dash white pepper
- Mango Jalapeno Sauce:
- 1 cup frozen mango chunks
- 1/2 cup water
- 1 TBSP olive oil
- 2 TBSP soy sauce
- 1/2 tsp ginger powder
- 1/2 tsp garlic powder
- 1 TBSP honey
- 3 jalapenos, stems removed
- Garnish:
- 2 TBSP sliced green onions
- 1 TBSP thinly sliced jalapeno pepper
Directions
- Preheat the oven to 250 degrees F. Place the wings into large bowl then toss with oil.
- In a small bowl mix the baking powder, salt, garlic powder, chili powder, onion powder, and ginger powder. Sprinkle the mixture over the oiled wings and toss to coat. Place wings on wire racks above foil lined baking sheets and bake for 30 minutes.
- Turn the heat up to 425 degrees F and bake for 1 hour longer.
- In the meantime make the sauce: In a blender combine the mango, water, olive oil, soy sauce, ginger, garlic, honey, and jalapenos. Puree until smooth.
- Turn the broiler on high. Once the wings are cooked through and crispy liberally brush them with the sauce on both sides. Place in broiler for 3 minutes or until caramelized.
- Serve the wings sprinkled with green onions and sliced jalapenos and with the extra sauce on the side for dipping.
