INGREDIENTS
1/4 cup olive oil plus a little extra
2 pounds boneless white fish such as cod or tilapia
1 large onion, thinly sliced
2 medium garlic cloves, minced
1 cup grape tomatoes, halved
14 ounce can artichoke hearts, drained, rinsed, and chopped
2 TBSP freshly squeezed lemon juice
1 tsp salt
1/4 tsp freshly ground black pepper
1/2 tsp dried oregano
1/2 tsp dried parsley
1 medium lemon, thinly sliced

DIRECTIONS
Preheat the oven to 350°F.
Brush the inside bottom of a 9x13 baking dish with a little olive oil to lightly coat.
Pat the fish dry and place in the baking dish, set aside.
Heat the 1/4 cup of olive oil in a large saute pan over medium-high heat.
Add the onion and cook, stirring occasionally, until soft, about 5 minutes.
Stir in the garlic and cook for 10 seconds or until fragrant.
Stir in the tomatoes, artichokes, lemon juice, salt, and pepper. Top the fish with the vegetable mixture then sprinkle on the oregano and parsley.
Lay the lemon slices on top and bake, uncovered, in the preheated oven for 30 to 40 minutes or until fish is cooked through.
