Quick & Easy Vegetarian Tuscan Pasta
Mediterranean flavors come together in this simplistic and great tasting pasta dish prepared in only about 20 minutes.

Ingredients
- 1/4 cup olive oil
- 1 TBSP capers, chopped
- 1 TBSP lemon juice
- 2 medium garlic cloves, minced
- 1/4 tsp red pepper flakes
- 1 cup grape tomatoes (about 20), halved
- 1/2 cup pitted Kalamata olives, halved
- 4 ounces feta cheese, crumbled
- 1/4 cup fresh basil leaves, chopped
- Dash salt
- 1/4 tsp freshly ground pepper
- 8 ounces cavatappi or gemelli pasta
Directions
- Add all the ingredients except the pasta in a large mixing bowl and stir to combine. Cover and let sit while you make your pasta.
- Cook your pasta according to package directions.
- Drain the pasta and add it to the mixing bowl, gently toss to combine.
- Add salt & pepper to taste and serve.

Loved it! Very garlicky so you may want to cut back on the garlic a bit if you're not a big raw garlic fan, but I thought it was great.
