Sherried Mushrooms Tapa

Ingredients
2 TBSP olive oil
8 oz button mushrooms
1/2 cup sherry
1/2 tsp sherry or red wine vinegar
Kosher Salt
Fresh ground pepper
Chives, chopped
Directions
1. Heat a 12 inch skillet over high heat until extremely hot. Add the oil and the mushrooms.
2. Sprinkle with salt. Cook, stirring often, over high heat until mushrooms are well browned on all sides.
3. Add the sherry and cover immediately for 15 seconds. Uncover and cook until the liquid has thickened and is syrupy.
4. Add the vinegar and black pepper. Taste and add more salt if needed.
5. Put in a serving bowl and sprinkle with chives. Serve with toothpicks.
