Sherried Mushrooms Tapa
Button mushrooms sauteed in sherry and topped with freshly chopped chives.

Ingredients
- 2 TBSP olive oil
- 8 ounces button mushrooms
- 1/2 cup cooking sherry
- 1/2 tsp red wine vinegar
- Kosher Salt
- Fresh ground pepper
- freshly chopped chives
Directions
- Heat a skillet over high heat until extremely hot. Add the oil and the mushrooms.
- Sprinkle with salt. Cook, stirring often, over high heat until mushrooms are well browned on all sides.
- Add the sherry and cover immediately for 15 seconds. Uncover and cook until the liquid has thickened and is syrupy.
- Add the vinegar and black pepper. Taste and add more salt if needed.
- Put in a serving bowl and sprinkle with chives. Serve with toothpicks.
