INGREDIENTS

  • 2 TBSP unsalted butter
  • 2 medium garlic cloves, minced
  • 5 ounces fresh baby spinach
  • 8 ounces orzo pasta
  • 2 cups water
  • salt & pepper
  • 2 ounces feta cheese, crumbled



DIRECTIONS

  1. In a medium-size saucepan melt the butter over medium-high heat.
  2. Add the garlic and spinach to the pan and cook, stirring often, until spinach wilts, about 2 minutes.
  3. Stir in the orzo, water, 1/4 tsp salt, and 1/8 tsp pepper then bring to a boil.
  4. Reduce the heat to medium-low and simmer, stirring occasionally, about 8 minutes or until the pasta has absorbed all the liquid.
  5. Take off the heat and stir in the feta cheese. Add salt & pepper to taste.
