- 2 medium garlic cloves, minced
- 5 ounces fresh baby spinach
- 8 ounces orzo pasta
- 2 cups water
- salt & pepper
- 2 ounces feta cheese, crumbled

Directions
- In a medium-size saucepan melt the butter over medium-high heat.
- Add the garlic and spinach to the pan and cook, stirring often, until spinach wilts, about 2 minutes.
- Stir in the orzo, water, 1/4 tsp salt, and 1/8 tsp pepper then bring to a boil.
- Reduce the heat to medium-low and simmer, stirring occasionally, about 8 minutes or until the pasta has absorbed all the liquid.
- Take off the heat and stir in the feta cheese. Add salt & pepper to taste.
