1 small head red cabbage, cored and finely shredded
1 large apple, thinly sliced
3 TBSP balsamic vinegar
2 TBSP plus 2 TBSP olive oil
1 tsp paprika
salt & pepper
4 bone-in pork chops (roughly 3/4-inch thick)
DIRECTIONS
Preheat the oven to 425°F.
Add the shredded cabbage and sliced apple to a large mixing bowl. Add the vinegar, 2 TBSP of oil, 1/2 tsp salt, and 1/4 tsp pepper to the bowl and toss until evenly coated.
Spread the cabbage and apples out evenly onto a large rimmed baking sheet.
Add 2 TBSP of oil to the now empty bowl along with the paprika, 1/2 tsp salt, and 1/2 tsp pepper and mix until combined.
Spread the pork chops out on top of the cabbage then brush the top side of the pork chops with the oil & spice mix.
Bake in the preheated oven for about 25 minutes or until the pork chops are cooked through (an internal temperature of about 140°F).
Take out of the oven and allow to sit for 10 minutes then season the cabbage with salt & pepper to taste.
