Tomato Pesto Pasta with Almonds

Penne pasta tossed with a fresh tomato pesto sauce made up of roma tomatoes, garlic, fresh basil, Parmesan cheese, and almonds.

Ingredients

  • 1 pound penne pasta
  • 1 pound roma tomatoes, chopped
  • 2 garlic cloves, peeled and chopped
  • 1 cup freshly grated Parmesan plus extra
  • 1 packed cup fresh basil leaves
  • 1/2 cup sliced almonds
  • salt & pepper
  • 1/3 cup olive oil

Directions

  1. Cook the pasta according to package directions. Drain and set aside.

  2. Add the tomatoes, garlic, Parmesan, basil, almonds, 1/2 tsp salt, and 1/4 tsp pepper to a blender or food processor and blend until pureed. Transfer sauce to a bowl and stir in the olive oil. Season with additional salt & pepper if needed.

  3. Add the pasta to the sauce and toss to coat. Serve topped with additional Parmesan.
