Toast the cashews in a dry skillet over medium heat while constantly stirring until lightly browned, 1 to 2 minutes. Take the pan off the heat and transfer cashews to a large mixing bowl.
Add the mango and apple to the bowl with the cashews.
Add the dressing ingredients to a small jar with a tight fitting lid and shake well to combine.
Pour the dressing over mango and apples and toss to combine.
