INGREDIENTS

  • 2 ripe mangoes, peeled, pitted, and 1/2-inch diced
  • 1 Granny Smith apple, peeled, cored, and 1/2-inch diced
  • 1/2 cup cashews
  • Chili-Lime Dressing:
  • 1 TBSP olive oil
  • 1 TBSP fresh lime juice
  • 1/8 tsp salt
  • 1/2 tsp chili powder



DIRECTIONS

  1. Toast the cashews in a dry skillet over medium heat while constantly stirring until lightly browned, 1 to 2 minutes. Take the pan off the heat and transfer cashews to a large mixing bowl.
  2. Add the mango and apple to the bowl with the cashews.
  3. Add the dressing ingredients to a small jar with a tight fitting lid and shake well to combine.
  4. Pour the dressing over mango and apples and toss to combine.
