Combine the spices (smoked paprika, cumin, salt, garlic, onion, black pepper, cinnamon, mustard, and cayenne) in a small bowl and set aside.
Separate the ground beef into 8 equal size portions then roll each portion into a ball.
Flatten the ground beef balls into evenly thick patties roughly 3-inches in diameter then use your thumb to press a small indentation in the center of each patty.
Oil a griddle or large skillet then heat it up over medium heat until very hot.
Sprinkle half the seasoning mix evenly on the top of the beef patties then lay the patties (seasoning side down) into the hot pan.
Now sprinkle the remaining seasoning mix evenly on the unseasoned side of the patties.
Cook the burgers until cooked to your liking, roughly 2 to 4 minutes per side.
While the burgers cook make the tartar sauce: Mix together the mayonnaise and diced pickles in a small bowl then set aside.
When the burgers are cooked serve them on the split rolls with the tartar sauce.
