Finely chop the parsley leaves then place into a mixing bowl.
Stir in the 1/2 cup olive oil, the dried oregano, the crushed red pepper, the minced garlic, the vinegar, 1/4 tsp salt, and 1/8 tsp freshly ground black pepper until well combined.
Taste the sauce and add additional salt & pepper and/or olive oil to desired taste and consistency.
