INGREDIENTS
1 pound ground pork
4 medium garlic cloves, minced
1 serrano pepper, minced
2 TBSP red wine vinegar
1 TBSP paprika
1/2 tsp salt
1/2 tsp freshly ground black pepper
1/8 tsp ground cinnamon

DIRECTIONS
Use your hands to mix all the ingredients in a large bowl until well combined.
Cover the bowl and refrigerate for at least 12 hours to allow the flavors to meld.
Roll the sausage into balls roughly 2-inches in diameter then flatten them with your hands into 1/4-inch thick patties.
Heat a pan over medium heat and cook the patties until browned on both sides and cooked through, about 3 minutes per side.
