Linguine al Limone

A lemony pasta dish made with fresh lemon and freshly grated Parmesan cheese.

Linguine al Limone recipe

Ingredients

  • 1 pound uncooked linguine pasta
  • salt & freshly ground black pepper
  • 3 TBSP olive oil
  • zest and juice from 1 large lemon
  • 2 ounces freshly grated Parmesan cheese




Directions

  1. Bring a large pot water to a boil.

  2. Add the linguine and 1/2 tsp salt to the boiling water and cook the pasta about 2 minutes shy of al dente.

  3. Drain the pasta reserving 1/2 cup of the pasta water.

  4. Stir together the oil, lemon zest, and lemon juice in the now empty pot over medium heat.

  5. Add the linguine, 1/4 tsp salt, and 1/4 tsp freshly ground black pepper to the pot then stir to combine.

  6. Slowly stir in the reserved pasta water and cook, stirring often, for about 2 minutes.

  7. Transfer pasta to a large bowl and stir in the Parmesan cheese then season with salt & freshly ground pepper to taste.
