INGREDIENTS
1 pound uncooked linguine pasta
salt & freshly ground black pepper
3 TBSP olive oil
zest and juice from 1 large lemon
2 ounces freshly grated Parmesan cheese

DIRECTIONS
Bring a large pot water to a boil.
Add the linguine and 1/2 tsp salt to the boiling water and cook the pasta about 2 minutes shy of al dente.
Drain the pasta reserving 1/2 cup of the pasta water.
Stir together the oil, lemon zest, and lemon juice in the now empty pot over medium heat.
Add the linguine, 1/4 tsp salt, and 1/4 tsp freshly ground black pepper to the pot then stir to combine.
Slowly stir in the reserved pasta water and cook, stirring often, for about 2 minutes.
Transfer pasta to a large bowl and stir in the Parmesan cheese then season with salt & freshly ground pepper to taste.
