In a stand mixer or large bowl mix the yeast, honey and water. Let stand 10 minutes or until it begins foaming.
Add the 1 TBSP oil, salt and flour and mix until well combined and dough pulls away from sides of bowl.
Use a little oil to lightly cover sides and bottom of a separate large bowl.
Knead the dough 10 minutes by hand or about 5 minutes using a stand mixer with a dough hook.
Form the dough in a ball and place in the oiled bowl. Cover and put in a warm place to rise.
Use dough after about 30 minutes or place in the fridge for later use.
ASSEMBLE THE PIZZA:
Preheat oven to 450° F. Lightly oil a 16 inch pizza pan.
Working from the center and spreading out to the edges press the dough with your fingers to form a large circle to fit your pizza pan. Place your formed dough on the lightly oiled pan.
Line a large plate with paper towels and spread out pepperoni slices on top (you may need to do it in batches). Microwave the pepperoni for 30 to 45 seconds, this pulls out some grease from the pepperoni and helps them to crisp up while in the oven.
Spread tomato sauce evenly on your formed dough then top with the mozzarella, pepperoni, pineapple and jalapenos.
Bake in the preheated oven for about 15 minutes or until crust is golden brown.
