2 TBSP freshly squeezed lime juice (about 1 medium lime)
DIRECTIONS
Heat the oil in a medium-size saucepan over medium-high heat.
Add the rice to the pan and cook, stirring often, for about 3 minutes.
Stir in the water, salt, and pepper and bring to a boil.
When the water begins to boil place a lid on the pan and reduce the heat to low. Simmer the rice over low heat, WITHOUT REMOVING THE LID, for 10 minutes.
After the 10 minutes turn off the heat and let the rice sit, WITHOUT REMOVING THE LID, for 15 more minutes.
After the 15 minutes take the lid off the pan and gently stir in the cilantro and lime juice.
Taste the rice and season with additional salt & pepper if necessary.
