Cilantro Lime Rice

Fragrant Jasmine rice with lime and fresh cilantro. A great side dish for any Mexican feast.

1 cup uncooked Jasmine rice
1 1/2 cups water
1/2 tsp salt
zest from 1 lime
2 TBSP freshly squeezed lime juice (about 1 lime)
1/4 cup fresh chopped cilantro


1. Add the rice, water, and salt to a medium saucepan over high heat and bring to a boil.

2. Reduce heat to low, cover the pan and cook, WITHOUT REMOVING THE LID AT ANYTIME!, for 10 minutes.

3. Take the pan off the heat, DO NOT REMOVE THE LID YET!, and let rest 15 minutes.

4. Now you can remove the lid. Fluff the rice with a fork and gently stir in the lime zest, lime juice, and cilantro.
