Cilantro Lime Rice
Steamed jasmine rice mixed with freshly chopped cilantro and freshly squeezed lime juice.

Ingredients
- 1 TBSP olive oil
- 1 cup uncooked jasmine rice
- 1 1/2 cups water
- 1/4 tsp salt
- 1/8 tsp freshly ground black pepper
- 1/2 cup freshly chopped cilantro
- 2 TBSP freshly squeezed lime juice (about 1 medium lime)
Directions
- Heat the oil in a medium-size saucepan over medium-high heat.
- Add the rice to the pan and cook, stirring often, for about 3 minutes.
- Stir in the water, salt, and pepper and bring to a boil.
- When the water begins to boil place a lid on the pan and reduce the heat to low. Simmer the rice over low heat, WITHOUT REMOVING THE LID, for 10 minutes.
- After the 10 minutes turn off the heat and let the rice sit, WITHOUT REMOVING THE LID, for 15 more minutes.
- After the 15 minutes take the lid off the pan and gently stir in the cilantro and lime juice.
- Taste the rice and season with additional salt & pepper if necessary.
