INGREDIENTS

  • 3 pounds russet potatoes, scrubbed and grated
  • 1 medium onion, finely chopped
  • 2 TBSP plus 2 TBSP olive oil
  • 4 large eggs, beaten
  • 2 tsp kosher salt
  • 1/2 tsp ground black pepper



DIRECTIONS

  1. Preheat the oven to 400°F.
  2. Add the grated potatoes and onion to a large mixing bowl then stir in 2 TBSP of the oil until the potatoes and onion are evenly coated in the oil.
  3. Stir the beaten eggs, salt, and pepper into the potato mixture until well combined.
  4. Spread the potato mixture evenly into a 9x13-inch baking dish then brush the top with the remaining 2 TBSP of oil.
  5. Bake in the preheated oven for about 1 hour or until top is well browned.
  6. Remove the kugel from the oven and allow to sit for 15 minutes before serving.
