INGREDIENTS
1 cup dried chickpeas (garbanzo beans)
1/2 tsp baking soda
6 cups water
1/4 cup ice-cold water
2 TBSP freshly squeezed lemon juice
4 garlic cloves, peeled
1 tsp ground cumin
salt & freshly ground black pepper
1 TBSP tahini
2 TBSP olive oil, divided

DIRECTIONS
Rinse the chickpeas thoroughly.
Stir together the chickpeas, baking soda, and 6 cups of water in a large saucepan over medium-high heat and bring to a boil.
Place a lid on the pan and reduce the heat to medium-low. Simmer the chickpeas over medium-low for about 1 hour.
Drain the chickpeas and place into a food processor and pulse into a paste.
Add the ice-cold water, lemon juice, garlic, cumin, tahini, 1/2 tsp salt, and 1/4 tsp black pepper to the food processor and blend until very smooth.
Transfer the hummus to a bowl and season with additional salt & pepper to taste.
Stir 1 TBSP of the olive oil into the hummus then drizzle the remaining 1 TBSP of olive oil on top.
