A Simple Hummus from Scratch
A homemade hummus made from dried chickpeas with cumin, fresh garlic, and fresh lemon juice.

Ingredients
- 1 cup dried chickpeas (garbanzo beans)
- 1/2 tsp baking soda
- 6 cups water
- 1/4 cup ice-cold water
- 2 TBSP freshly squeezed lemon juice
- 4 garlic cloves, peeled
- 1 tsp ground cumin
- salt & freshly ground black pepper
- 1 TBSP tahini
- 2 TBSP olive oil, divided
Directions
- Rinse the chickpeas thoroughly.
- Stir together the chickpeas, baking soda, and 6 cups of water in a large saucepan over medium-high heat and bring to a boil.
- Place a lid on the pan and reduce the heat to medium-low. Simmer the chickpeas over medium-low for about 1 hour.
- Drain the chickpeas and place into a food processor and pulse into a paste.
- Add the ice-cold water, lemon juice, garlic, cumin, tahini, 1/2 tsp salt, and 1/4 tsp black pepper to the food processor and blend until very smooth.
- Transfer the hummus to a bowl and season with additional salt & pepper to taste.
- Stir 1 TBSP of the olive oil into the hummus then drizzle the remaining 1 TBSP of olive oil on top.
